Coconut Bread

2 cups white sugar

1 cup veg. oil

4 eggs

2 t. coconut extract

3 cups flour

1/2 t. salt

1/2 t. baking powder

1/2 t. baking soda

1 cup buttermilk

1 cup shredded coconut

Glaze

1 cup sugar

1/2 cup water

2 T. butter

1 t. coconut extract

 

Bread directions:

1.  Beat together white sugar and oil.  Add eggs and extract.

2.  Sift together flour, salt, baking powder, and baking soda.

3.  Alternating the flouir, buttermilk, and shredded coconut add to the egg mixture.

4.  Bake at 325 for 1 hour 15 min.  Makes 2 loaves or 3 small loaves.

5.  While loaves are hot pour hot glaze over loaves.  To make glaze heat sugar, water, and butter.  At the very end add the coconut extract.  Pour over loaves while glaze is still hot.  Let sit for 4 hours to soak up all the liquid and bread firms up.  Remove from pans. 

(Someone was also telling me that an alternative recipe is to use strawberry extract instead of coconut.  They enjoy the bread both ways.  I haven't tried it, but... It might be good.)
