 Side Dishes - Acorn Squash, Basic - Olson Origins Next [Print] 
1 Acorn Squash, halved and cleaned
1 Tablespoon butter
2 Tablespoons brown sugar

Preheat oven:  350
Place squash face down on a baking sheet and bake 30-40 minutes until soft.
Remove one half, face up, to another, smaller baking dish so the squash fits in a way that it won't slide around too much.
Place butter and brown sugar in the middle.
Place the remaining half on top, face down, of the squash with butter/sugar mixture.
Bake another 30 minutes.  Serve hot--diners may want to add a pat of butter to individual servings (as with mashed potatoes)
 .
*Variation, some bake open face without putting one piece on top of the other.  In this case, divide the butter and sugar between the two halves--and add a bit of water to the bottom (enough to cover the bottom of the pan) of the baking dish.
