Wash, remove blossom end, and quarter 4 lbs. apples. Add 2 cups water and simmer until apples are soft and will mush with spoon. Put through sieve or colander or food mill. For each cup of pulp, add 1/2 cup sugar. Return to kettle and add:
2 TBLS lemon juice
3 tsp apple pie spice
Heat to boiling and boil (stirring frequently) until thick and right consistency. Put in clean, sterilized jars and seal.
Yield: 6 to 7 cups
