 Cake - Cocoa Cake - VickyPrevious Next [Print] 
Combine and beat for 2 minutes:
1-3/4 cup flour
1/2 cup cocoa
1 tsp soda
1-1/2 cup sugar
1/2 cup shortening melted or soft
1 tsp vanilla
2 eggs
1 cup milk
1 TBLS vinegar or lemon juice

Pour batter into greased and floured 9X13 pan.  Bake 30 minutes in 350° oven.  Cool cake and ice with Icing:

In a conversation today, 5/9/09, Mom (Gram-Ma Darlene) advises that the chocolate cake recipe I remember her making with coffee was this cocoa cake recipe and subtituting dark, cold coffee for the milk--and then adding a teaspoon of soda.  She says coffee and a bit of soda may be subsituted in most boxed chocolate cake mixes, too.

In letter received 5/14/09 from Darlene Olson and a follow-up converstaion of 5/16:
(Coffee) Chocolate Cake
To Use chocolate cake receipe calling for sour milk or buttermilk.  If recipe calls for soda, you're good to go. You may substitute the buttermilk or sour milk with milk and vinegar (1 c milk for 1 T vinegar) or same amount of strong coffee.

For a sweet milk cake (a recipe that uses regular milk, not buttermilk or sour millk), substitute coffee (strong) for liquid and add 1 tsp soda, Include bkg pdr if recipe called for.  If too much soda when you make the cake the first time, add tsp (or 2) of vinegar the next time you make it.
